About This Jugaad Coffee Walnut Cake
Jugaad is that very Indian idea of making something work brilliantly with what you've got — and this cake is exactly that philosophy applied to dessert. A moist eggless vanilla-and-coffee sponge is soaked in real espresso syrup, layered with a light coffee buttercream, and topped with a shattering walnut praline that adds the crunch this cake is built around.
It isn't overly sweet. The espresso is fresh-pulled, not instant powder dissolved in water, so the coffee flavour is deep and slightly bitter — cutting through the buttercream instead of hiding under it. The walnuts are roasted and caramelised into praline shards just before assembly, so they stay crisp against the soft sponge.
100% eggless. Jain-friendly (no onion, no garlic, no eggs). No preservatives. Best enjoyed within two days, refrigerated, and left at room temperature for 15 minutes before serving.
