About This Gulaabi Rose Cardamom Cake
Rose and cardamom is a flavour combination that shows up all over Indian mithai, and it translates beautifully into cake — if it's done with a light hand. Too much rose water and it tastes like perfume; too little and it's forgettable. We calibrate this carefully, using real rose water rather than synthetic essence, alongside freshly ground green cardamom.
The eggless vanilla sponge is layered with a soft rose buttercream and finished with a pistachio crumble that adds crunch and colour. It's a cake that reads distinctly Indian rather than trying to imitate a Western rose cake — closer to gulkand and elaichi than to a French rose gateau.
