Regular pav is soft and functional. Pav Royale is what happens when you take the same format and enrich it the way you would a French brioche — more butter, a touch of milk, and an egg-free glaze wash that gives the top that deep golden, slightly gilded shine.
It still works exactly like regular pav — split, toasted with butter, stuffed with vada or misal — but the texture is noticeably richer and softer, and it holds together better under a saucy filling. Once people try these for vada pav, going back to regular pav is difficult.
