About This Almond Croissant
An almond croissant is technically a way to use up yesterday's croissants well — day-old laminated dough is split, filled with frangipane, and baked a second time until the almond cream sets and the exterior turns deep golden and slightly crisp. We follow the same principle, starting with our 72-hour laminated butter croissant dough.
The frangipane is made from real ground almonds, not almond essence, and the whole thing is finished with toasted almond flakes and a dusting of powdered sugar. It's richer and more indulgent than a plain croissant, closer to a pastry than bread.
