There's fudgy, and then there's Mithas-fudgy. This brownie is baked deliberately under-set in the centre, so the very middle stays dense and almost molten while the edges hold structure — giving you that classic crackly, crinkle top with a gooey interior underneath.
We use a high ratio of dark cocoa to flour, which is what gives it that intense, slightly bitter chocolate depth rather than a sugary cake-brownie taste. Toasted walnuts are folded through generously, adding crunch and a little bitterness of their own that balances the sweetness perfectly.
