About This Belgian Chocolate Éclair
Choux pastry relies on eggs for its structure — they're what makes it puff up in the oven and hold that hollow shell. Making it properly eggless took us more attempts than almost anything else on our menu, but the result holds its shape and crisps exactly like the traditional version.
Each shell is piped by hand, baked until golden and properly hollow, then filled with a light vanilla pastry cream and dipped in glossy Belgian chocolate glaze. It's a small, classic French pastry, done the hard way, so you don't have to know it's eggless to enjoy it.
