Some desserts try to be clever. The Kesar Mango Tart doesn't bother — it just puts two of the best flavours in Indian dessert-making, saffron and Alphonso mango, in the same bite and gets out of the way.
The shell is a crisp, all-butter eggless shortcrust — blind-baked until it shatters slightly under the fork. Inside sits a silky custard infused with real Kashmiri saffron strands, steeped slowly so the colour and aroma come through naturally rather than from essence. Fresh Alphonso mango goes on top, sliced just before it's boxed so it stays firm and doesn't weep into the custard.
