About This Ruby Chocolate Mendiants
Mendiants are thin chocolate discs studded with nuts and dried fruit, traditionally made in dark chocolate — we make ours in ruby chocolate, a naturally pink-hued chocolate made from ruby cocoa beans (no food colouring or berry flavouring added) that has a distinct tart, berry-like flavour unlike milk, dark, or white chocolate.
Each disc is topped with a mix of pistachio, dried rose petals, and freeze-dried raspberry, chosen specifically to complement ruby chocolate's natural tang rather than fight it.
